Axel Alonso has said there are roughly 60 new #1's and Tom Brevoort has said that the ones in the catalogue aren't all of them and that more will be launched later.

We know Gamora has a new title, and it's assumed Squirrel Girl and Groot will restart.

I would read Squirrel Girl just out of curiosity. Would Ultimate AF work in the MCU these days?

Well Squirrel Girl's current book is up to #7 so it's out there now!

There is no Ultimate Universe anymore so no Ultimate AF unfortunately.

Ultimate AF is very much 'in name only'. If drug addicts as super heroes does work in the MCU, it says bad things about the MCU.
