Most of my thoughts about this question have been centred around 'who would compose the score?' rather than what bands will have random songs play throughout.

I couldn't come up with anybody. If John Williams expressed an interest, I'd give it to him (if I were in a position to do so), but I'm not sure he's the most suited.
He's famous for (among other things) his Americana - so who is known for Canadiana?
